Butternut squash veloute

Didn’t think I would write this one day because I spent my past years running away from it but… WINTER IS HERE. I’m always frozen, I’m even cold in Indonesia very often. I don’t need AC because I’m always cold, so imagine me back in Europe after a few years with no cold weather at all..? When I left France for good, I was convinced that I would never need winter clothes anymore, that was without imagining I would go through earthquakes, pandemics and all those things. I’m slowly finding some warm clothes here and there but what I found more easily and enjoyed is, WINTERY FOOD. So there you go with the easiest yet tastiest velouté ever. If you don’t have butternut squash around you can do it with any other squash, just adapt the seasoning to your liking.

Ingredients

  • 1 butternut squash

  • 1 carrot

  • 1 onion

  • 1 potato

  • 15g of salt

  • A dash of Cream of plant based cream

Directions

  • Peel all the ingredients and put them in a pot.
  • Add water so it just covers the veggies. Bring to boil
  • Once the carrot is cooked through, blend your velouté, check the seasoning, you might add more salt or pepper.
  • Plate it and it it warm, you can add bacon bits if you want but we love to bring crunch with grilled hazelnuts!

J’avais pas prévu d’écrire ça un jour car je passe mon temps à le fuir mais c’est l’hiver… Qui dit hiver dit fruits et légumes d’hiver. Qu’on se le dise je trouve ça bien moins funky que ceux du mois de Juin mais bon… La diversité des produits français fait quand même bien plaisir. Nous voilà avec un velouté de butternut. Grand classique mais tellement efficace.

Ingredients

  • 1 courge butternut

  • 1 carotte

  • 1 oignon

  • 1 pomme de terre

  • 15g de sel

  • 50g de crème liquide ou crème végétale.

Directions

  • Épluchez tous les ingrédients et placez les dans une grande casserole.
  • Mouillez à hauteur afin que les légumes soient tout juste recouverts. Portez le tout à ébullition.
  • Quand la carotte est cuite, mixez le tout, vérifiez les assaisonnements et servez. Vous pouvez ajouter de la poitrine fumée en topping, on préfère rester sage et ajouter des noisettes torréfiées.
